I am always running out of the house in a hurry on weekday mornings, usually grabbing a granola bar or banana because I ran out of time to make breakfast. Anyone else? Well, I found 5 quick (10 minutes or less) recipes for those very days.
Warm Banana Coconut Breakfast Bowl
2 ripe bananas cut into coins
1/2 cup coconut milk
1/4 cup pecans
1/8 cup shredded coconut
1 teaspoon cinnamon
Mix all ingredients together and warm on the stove.

Quinoa Breakfast Bowl
I cook plain quinoa each week and store it in the fridge for recipes like this.
Combine all ingredients in a bowl or mason jar to enjoy on the go.

Strawberry Chia & Quinoa Parfait
1 cup cooked quinoa
4 tablespoon chia seeds
1 1/3 cup non dairy milk (I prefer unsweetened vanilla almond milk)
3/4 cup quartered strawberries
1/2 tablespoon coconut sugar
4-6 quartered strawberries
2 -4 tablespoon pecans
2 – 4 tablespoon shredded unsweetened coconut
2-4 tablespoon slivered almonds
to make strawberry chia:
combine non dairy milk, strawberries, coconut sugar and chia in the blender and pour into individual mason jars. allow to set overnight.
to prepare:
top with cooked quinoa, fresh strawberries, coconut, almonds, and pecans.

Herbed Goat Cheese & Radish Tartines
4 slices gluten-free bread, toasted
1 raw garlic clove
3-ounces goat cheese, room temperature
1/2 teaspoon lemon zest
4 sprigs fresh dill, de-stemmed & minced
4 sprigs flat-leaf parsley, de-stemmed & minced
4-5 radishes, sliced thin (use mandolin or paring knife)*
Micrograms, to top
Freshly cracked pepper
Sea salt, to taste
When your bread is toasted & still warm, rub raw garlic clove evenly over each slice. Set aside.
In a small mixing bowl, stir together goat cheese, lemon zest and fresh herbs until evenly combined. Spread herbed goat cheese evenly across each toast. Layer with sliced radish and top with microgreens. Season with flaky sea salt and freshly cracked pepper. Serve immediately.

Avo & Egg Open Face Breakfast Sandwich
Egg
Piece of hearty toast (I prefer Dave’s Killer Bread)
½ Avocado
salt and pepper to taste
Open the avocado, remove the skin, and place half of the avocado in a small bowl. Add salt and pepper to taste and smash.
Toast one piece of toast.
Cook egg to your preferred level.
Add the avocado to the top of the toast. Top with your egg. ENJOY!
